I’m starting to see watermelons come into my grocery store which only means one thing!! Summer is almost here! Who doesn’t love a refreshing bowl of watermelon?
It’s such a versatile fruit and here is one way that I really love to enjoy it!
Watermelon Mediterranean Salad
Prep: 5 minutes
Makes: 6 Servings
Ingredients:
· 3 cups cubed watermelon
· 6 cups torn mixed salad greens
· 1/2 cup sliced red onion
· 1 tablespoon extra virgin olive oil
· 1/3 cup crumbled feta cheese
· 1 dash cracked black pepper
Directions:
In large bowl, mix all ingredients except oil and pepper. Just before serving, toss salad mixture with oil. Garnish with pepper.
