Strawberry Cottage Cheese “Ice Cream”

Ingredients
  

  • 1 cup 2% Low-Fat Cottage Cheese
  • ½ cup chopped fresh strawberries
  • 1 Tbsp PB2® Powdered Peanut Butter
  • 2 teaspoons stevia or honey
  • 2 Tbsp Dark Chocolate Chips

Instructions
 

  • In a food processor, add cottage cheese, strawberries, PB2 Powder, stevia or honey and process until smooth.
  • Line a freezer safe container with parchment paper (optional). Pour cottage cheese mixture into container.
  • Freeze for 2 to 3 hours. Allow to sit at room temperature for about 15 minutes before serving to soften just slightly.
  • Scoop into two bowls and top each bowl with 1 Tbsp of Dark Chocolate chips. Enjoy!
