Make Ahead Salsa Zucchini Boats

Do make-ahead snacks float your boat? 

 

These zucchini boats are super quick to prepare and a fun make ahead option for meals and snacks! Having ready to go snacks prepared ahead of time will not only make life easier but it will ensure you actually eat them! 

 

The easier you make things on yourself, the more likely it will be that you reach your weight loss goals. Have a plan, stick to your plan, lose weight! 

 

Soooooo…that brings me to these zucchini boats. I enjoyed these as a snack, but you can totally make this your side dish as well! I hope you love them as much as I do! 

 

Low Calorie Salsa Zucchini Boats 

Ingredients: 

1 Medium Zucchini

¼ cup salsa 

¼ cup Chickpeas 

¼ cup shredded cheese (any style) 

Cooking spray 

 

Directions: 

Preheat oven to 400°F. Spray a baking sheet with cooking spray, set aside. 

Cut zucchini in half lengthwise. Hollow out center of zucchini halves with spoon (leaving ¼-inch thick outer shell). 

Place zucchini skin side down on baking sheet, spray with cooking spray. 

Combine salsa and chickpeas, scoop into zucchini halves and top with cheese. 

Bake 20 minutes, or until zucchini is tender and cheese is melted.

91 calories; 10g carbohydrate; 4.5g fat; 2g protein; 123mg sodium; 1.5g fiber
