Low Calorie Zucchini Pizza Boats

Craving pizza? Get ready for spring with these low cal Zucchini Pizza boats! These are so satisfying and delicious, you won't believe they are only 131 calories for 2 boats. Weight loss can be delicious when you incorporate volume foods like zucchini.

  • 2 medium zucchini
  • Kosher salt & pepper
  • ½ cup marinara sauce no sugar added
  • 6 mini BelGioioso Fresh Mozzarella Balls each cut in half
  • ½ teaspoon Italian seasoning
  • 1 tablespoon grated parmesan cheese
  • Fresh basil chopped


  • Preheat oven to 425 degrees F. Lightly coat a baking sheet with cooking spray.
  • Cut zucchini in half lengthwise. Using a small spoon or melon baller, scrape out the center zucchini flesh and pulp, leaving a border about ¼ inch on all sides.
  • Place on baking sheet and season the zucchini with salt & pepper.
  • Spoon marinara sauce evenly into each shell, feel free to add more sauce sif desired. Top with mozzarella halves. Season with Italian season and parmesan cheese.
  • Bake for 15 to 20 minutes or until cheese is bubbly and zucchini is tender. Remove from oven and top with fresh basil and enjoy!
