We’ve been doing a fair amount of baking around here; you name it…banana breads, chocolate chip cookies, brownies, you get the picture. I’m starting to find my kids want a sweet treat now every day, so I had to pull together something that is going to offer a bit more nutrition.
These healthy Cranberry almond cookies are perfect, at only 100 calories each you can satisfy your cookie craving and actually feel full! The Oats and almonds come together to give you some real staying power. I enjoyed mine with a cup of tea and I was in bliss!
Remember, no foods are off limits, it’s how you incorporate them into your overall diet that makes all the difference.
Healthy Cranberry Almond Cookie
Prep: 5 minutes
Bake: 15 minutes
Makes: 6 cookies
Ingredients:

½ cup ground almonds

½ cup quick oats
-
¼ cup egg whites (2 egg whites)

½ banana, mashed
-
1 Tbsp 70% Dark chocolate chips

1 Tbsp dried Cranberries
Directions:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper, set aside.

To ground whole or slivered almonds place them in a food processor and process until almonds resemble tiny pebbles.

Combine egg white with banana, then add remaining ingredients, almonds, oats, chocolate chips and cranberries.

Scoop two level tablespoons for each cookie onto baking sheet, using spoon or hands form into round disks. NOTE: These cookies will not rise, as you shape them is as they will come out.

Bake for about 15 minutes or until crisp.
