Hands up if you need a fast, filling meal!
I gotta tell you, I don’t have a lot of time these days. It’s amazing how little I get done being home with my kids all day. I can’t make sense of it. So, since my kids barely allow me to eat, I have to come up with quick meal ideas that are satisfying and easily fit into my health goals.
I always have some kind of grain prepped in my fridge for quick meals. This week I have red quinoa, a nutty grain that is high and protein and fiber (I love that), so I paired it with some crunchy veggies, chickpeas and topped it off with an egg!
10 minutes later (and with very little effort) I have a super tasty meal that will hold me over for a few hours. Winning!!
Quinoa bowl with Chickpeas & Egg
Prep: 10 minutes
Makes: 2 Servings
Ingredients:

1 cup cooked Red Quinoa

1 cup chickpeas

¼ cup minced red onion
-
1 orange bell pepper, chopped

1 handful parsley, chopped
-
1 lemon, juiced
-
Salt & pepper to taste

2 eggs
Directions:

Combine all ingredients in a large bowl (quinoa to salt & pepper) toss well. Chill for 20-30 minutes if desired (not necessary).

Prepare egg pan fried, hard boiled or soft boiled. Serve one egg over 2 cups prepared salad. Reserve retaining portion for another meal!
Nutrition Information: 2 cups quinoa salad and one large egg.
