Crispy Prosciutto Egg White Sandwich

Favorite meal of the day – BREAKFAST! This crispy prosciutto egg sandwich sounds and tastes indulgent, but really, it’s only 251 calories. The perfect way to start my Sunday before my households gets crazy 

Starting your day with breakfast means a more alert brain and a more active body! After a 10 to 12 hour fast our bodies need the fuel to maintain vital functions and our brains need the fuel to think clearly. 

Adults who skip breakfast are less mentally and physically efficient for longer periods of time during the day. 

Studies show that people who eat breakfast are more successful at losing weight and sticking to a healthy eating plan.  

Eating a bigger meal in the morning and a smaller meal at night may optimize your daily energy levels. 

Crispy Prosciutto Egg White Sandwich 

Prep: 5 minutes 

Ready in 10 minutes 

Makes: 1 Sandwich 

 

Ingredients: 

2 slices (½ ounce) Prosciutto di Parma (sliced thin)

½ cup Egg Whites 

2 tablespoons diced bell pepper 

½ ounce gouda cheese 

1 Whole Wheat English Muffin, toasted 

Directions: 

Heat a skillet over high heat, spray with cooking spray and place prosciutto on pan. Cook over high heat until crisp, approximately 1 minute per side.  Remove from heat and set aside.  

To the same skillet, add diced bell pepper, cook until soft and pour in egg whites. Cook over well. Top with gouda cheese. 

Assemble sandwich, on one half of English muffin place egg followed by prosciutto and cheese and top with remaining half of muffin. Enjoy Warm
